Lentils

It is downright cold these days. Filling dishes like soups and stews have been calling my name. Pots of beans are down right irresistible. These lentils are the comfort food you will come to dream of my friends. As with most food I prepare, this is quite simple. In addition, sorry I’ve been away so long. I have many posts I need to write but haven’t had the time. Hopefully that will change soon.

Here we go!

Olive oil
1 cup each of diced celery, onion, and carrots
Diced ham
1 can of diced tomatoes
1-2 tbsp italian seasoning
16 oz of dried lentils, rinsed and drained
32 oz chicken broth

Warm a couple tbsp of olive oil in a large pot or Dutch oven. Cook veggies until softened. Season them with salt and pepper. Add ham and cook until browned. Add tomatoes and seasoning. Stir to combine and cook until warm.

Add rinsed and drained lentils and stock. Bring to a simmer. Cover and let cook for 30 minutes stirring occasionally.

Enjoy this simple, warm, and filling dish.
